Eggs in a Jar


4 or 8 large eggs

3/4 lb. button mushrooms, thinly sliced

4 slices of bacon, cut into chunks

2 greens onions, minced

1 tbsp. chives, minced

1 tsp. almond flour

1/2 c chicken stock

2 tsp. fresh lemon juice

1 tbsp. butter or oil

Sea salt and freshly ground black pepper to taste


1. Brown bacon in skillet

2. add onions and mushrooms

3. add almond flour and combine everything together, then add chicken stock and lemon juice. Bring to a boil.

4. rub some oil/fat on bottom and inside edges of 4 glass jars

5. pour bacon and mushroom mixture evenly in each jar and break one or two eggs on top

6. place 4 jars in big cooking pot and add water until it reaches the middle of jars

7. bring to medium-high heat and cook until eggs are the way you like them.

8. Once cooking is done, remove the jars from pot very carefully, they will be HOT. Set aside until cool enough to handle.

9. Sprinkle some chives on top and serve.
